This is a recipe I have developed over the year in the style that I call “minimalist cooking”, which means it requires minimal work and equipment, and is made up of minimally processed foods. It’s a great source of protein, and I make a of version of this pretty much every week.
Ingredients (3-4 servings):
Olive oil
1 package (16 oz) ground turkey
1/2 onion, diced
1 bunch green onions, chopped
3 baby bok choys, chopped
1 tbsp ginger (fresh or ground)
1/2 teaspoon white miso paste
About 3 tablespoons soy sauce
Sesame oil
Sesame seeds
1 cup jasmine rice
Instructions:
Cook rice according to instructions on package
Heat a drizzle of olive oil in the pan with ginger and miso
Next, add the turkey and cook 3/4 of the way
Then, add diced onion and cook until both turkey and onion are almost fully cooked
Add bok choy (you can also sautee this separately) and half of the green onions (save the other half for topping)
Add soy sauce and a drizzle of sesame oil
Continue to cook until the vegetables and meat are fully done
Serve with rice and garnish with green onions and sesame seeds
